Bajawa Arabica grows in the Ngada regency of Flores Island, East Nusa Tenggara — one of Indonesia’s most distinctive volcanic archipelago coffee zones. Nestled between the active volcanoes of Inerie and Ebulobo, the coffee farms sit at 1,200–1,600 metres above sea level on mineral-rich volcanic slopes.
The Bajawa farming community is predominantly smallholder-based, with many farmers organized into cooperative groups under the Flores Bajawa Coffee program. The high altitude, cool temperatures (16–22°C average), and regular cloud cover create slow cherry maturation — producing denser beans with complex sugars and bright acidity that distinguish Bajawa from lowland Indonesian coffees.
Flores as an island has gained recognition among specialty buyers worldwide precisely because of Bajawa’s consistent, traceable lots and its departure from the Giling Basah wet-hull profile typical of Sumatra. Many Bajawa lots are fully washed, yielding a cleaner, fruit-forward cup that appeals to light-roast specialty roasters.

Unlike most Indonesian Arabica which uses Giling Basah (wet-hull) processing, Bajawa producers increasingly offer fully washed and honey-processed lots — a differentiating factor that makes Bajawa highly attractive to specialty roasters seeking clean, fruit-forward Indonesian coffees.
Cherry is depulped, fermented in water tanks 24–36 hours, washed, and dried on raised beds. Produces the cleanest, brightest cup — ideal for light to medium roast filter coffee.
Mucilage left on during drying creates natural sweetness and body. Cup profile sits between washed and natural — suits medium roast espresso blends.
Traditional wet-hull process also available for buyers seeking the classic earthy Indonesian profile at a lower price point.
